Cheesy Green Soup
This is a great way to get in those cruciferous veggies and to use up and leftover greens you may have that are starting to not look at their best. Plus, the addition of the cheese makes this feel incredibly naughty!
Ingredients
- 1 large White Potato
- 200 g Broccoli
- 1 Courgette
- 1 medium White/Brown Onion
- 2 Garlic Cloves
- Any other green veg that may need using up (kale, spinach, leeks, cabbage, Brussel sprouts)
- Water
- Grated Cheddar Cheese
- Sunflower Seeds (optional)
- Salt & pepper, to taste
Instructions
- Chop all vegetables and throw in a pan
- Add water until all vegetables are almost covered and a generous pinch of salt
- Bring to the boil and simmer for 30 minutes
- Remove from the heat and using a hand blender, blend until smooth
- Ladle in soup bowls, seasoning as required and adding a handful of the cheddar cheese to each bowl
- Stir the cheese into the soup mix, sprinkle pumpkin seeds on top (if using) and enjoy
Notes
During Detox Week 3, be sure to omit the cheese completely. You may also need to omit the potato if you are excluding those, if that is the case use less water and perhaps add cauliflower maintain a thicker consistency.
Sprinkling sunflower seeds on top of your soup also helps with healing your PMS symptoms. Having pumpkin seeds during the menstuating and follicular phases of your cycle will help to support progesterone production in your luteal phase, as these contain high levels of zinc.
